It’s that time again! Tasty Tuesday! I had some lentils, garbanzo beans and tomatoes in the pantry and I wanted to use my crock to make an easy weeknight meal! So after some thought and googling for ideas, an Indian type of curry transpired. I decided to wing my own recipe and this is what happened…
This is what I used:
1 cup Lentils
1 can garbanzo beans
1 can tomatoes
2 cups water
1 jar Masala sauce
8 mini peppers sliced
Cauliflower chopped *
Kale *
Carrots chopped *
Mushrooms sliced*
Curry powder *
Garlic salt *
Cumin *
Hungarian paprika *
4 tbsp peanut butter
*As little or as much as you want!
How to make:
Throw all ingredients into crock. There is no specific order to throwing things in the crockpot for this recipe. Cook on low for 4-5 hours and stir occasionally.
Voila! Easy peasy weekday dinner. I served with pita bread (my grocery store didn’t have naan). You could also serve with rice, quinoa or cous cous. So this week get out and get crocking!
