Ground Turkey and Vegetable Biscuit Casserole Recipe

Hi Guys! Hope ya’ll had a fantastic weekend and you are loving this fall weather! Sunday nights are always a time for me to rummage the refrigerator to see what items I need to use up. And today, I had sweet success with a quick kid friendly and lots of veggies casserole. And who doesn’t love an easy casserole on a cool fall day? Here is what it looked like:

Biscuit Casserole

Here is what you will need:

  1. Ground Turkey
  2. Biscuits (I used Trader Joe’s Buttermilk Biscuits)
  3. Mushrooms
  4. Diced Onion
  5. Garlic
  6. Broccoli
  7. Spinach
  8. Frozen Peas
  9. Shredded Parmesan Cheese
  10. Sharp Cheddar Cheese
  11. 3/4 cup Milk
  12. 1 Tbsp. Olive Oil

How to Make it:

  1. Preheat oven to 375 Degrees
  2. Spray Baking Dish with Olive Oil Spray (or whatever you might have)
  3. In pan, add Olive Oil and saute onions and garlic
  4. Next add your Ground Turkey and cook until browned
  5. Add the frozen peas
  6. Now add remaining vegetables (use as much or as little as you want). Cook for about a minute then add Milk and Cheeses (add as much or little as you like of the cheese). Stir and set aside and keep covered to ensure cheese melts.
  7. In Baking Pan layer biscuits on bottom (I split mine in half to have ample for both top and bottom) Then add your ingredients from saute pan on top of the biscuits. Place another layer of biscuits on top
  8. Place in Oven and bake for 11-15 minutes
